Brooke Cooks - Pot Roast + Beer Bread Recipe

Anyone else love fall time and the hearty, yummy food we get to go along with it?

Pot roast is one of the easiest meals to prepare and I love doing it this time of year. I make mine in a crock pot, and here's how.

Below is the recipe.

Pot Roast:

Ingredients:

  • Salt + Pepper (I like freshly ground pepper)
  • One 3-5lb chuck roast
  • 1 large whole onion, peeled and chopped
  • Bag of whole carrots
  • Bag of celery
  • 3-4 cups of beef broth (I always use a whole carton because I like to make homemade gravy)
  • 1 tbs of tomato paste (optional)
  • 4 cloves of garlic coarsely chopped
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon of thyme
  • 1 bay leaf
  • You can also chop up and add potatoes to this, but I like to make mashed potatoes instead.

Instructions:

  • Sear Chuck Roast in a pan with olive oil til it is brown on each side.
    • You can also skip this step if your chuck roast is frozen, just put it directly into the crock pot. (This is how I usually do it)
  • Chop Carrots, Onions, and celery and arrange around the roast.
  • Combine broth, garlic, rosemary and thyme. Pour over the roast and add a bay leaf on top.
  • I put mine in the crockpot around 10am and let that bad boy sit on low til around 2-3pm.. then I turn it to high until dinner time.
  • If you want to make gravy here's how I do mine:
    • Melt 6tbs of butter in a pan, whisk in 1/2 a cup of flour for about 30 seconds, then slowly add in around 4-6 cups of the broth from your crock pot and stir stir stir. It'll be REALLY thick at first.. just keep adding more broth until you achieve your desired consistency.

Here's the BEST part... BEER BREAD.

It's the easiest thing to make and SO delicious.

You'll need:

  • 3 cups of self rising flour
  • 1/2 cup of butter
  • 1/4 cup of sugar
  • 1 light beer (Coors Light, Busch Light, Bud Light) whatever you have will be just fine. Must be a LIGHT beer though, the IPA's and other beers work but give the bread a slightly different taste.

Instructions:

  1. Spray a loaf pan with non-stick spray
  2. Melt butter and pour 1/2 into the bottom of the loaf pan
  3. Mix flour, sugar and beer together in a bowl & pour into the loaf pan.
  4. Pour remaining butter on top of the bread batter.
  5. Place into.a 350 degree oven for 40 minutes or so.
